This is by far one of the easiest and most delicious cookie recipes out there!

I don’t have a sweet tooth, but I do love me some chocolate chip cookies and the following recipe had me vow to never buy them in stores again!

I originally found the recipe on Pinterest from The View From Great Island blog and it was done with peanut butter. Since we had almond butter instead I did it with that and adapted the recipe slightly.

Flourless Almond Butter Chocolate Chip Cookies

Get It

  • 1 cup almond butter measured with a dry ingredients measuring cup
  • 1 cup dark chocolate chips
  • 1 tablespoon baking soda
  • 1 large egg
  • 1/3 cup of natural brown sugar packed into the measuring cup

Make It

  1. Preheat oven to 350 F
  2. Line parchment paper over a baking sheet (no need to add oil or butter)
  3. Mix brown sugar, baking soda, and egg together until it is smooth
  4. Stir in almond butter and then fold in the chocolate chips
  5. Using a tablespoon, scoop the cookie mix and place it on the baking sheet spacing the cookies about 2 inches apart
  6. Slightly flatten the cookies and bake for about 10 minutes or until they are golden around the edges
  7. Cool the cookies for about 5 minutes, then you can transfer them to rack or just serve and enjoy!

Tips:

  • The cookies come out really soft out of the oven so make sure to not over bake them. Once they cool they firm up and are scrumptious! But they are a bit fragile while they are warm so handle carefully.
  • Almond butter is made up primarily of unsaturated fatty acids AKA “the good fats” which helps with maintaining healthy cholesterol levels and in turn a healthy heart. It is best to purchase one with no sugar added.
  • Raw, unprocessed cocoa beans (where chocolate comes from) are ranked among the highest antioxidant rich foods on the planet! So the darker the better!

Fun Fact: Chocolate chip cookies originated from the state of Massachusetts and were discovered by mistake.

      • Absolutely! Going to try this at the weekend There’s a blog I follow called the juice nut (I think the actual name is “pears not parsnips dot com” – I would link but I don’t know how to when I’m writing back in the shortcut sidebar comment thing. She comments a lot on my posts, you may have seen it) ANYWAY, lol, she has a really good blog about healthy foods, smoothies and suchlike. I like to try a few things from that too. Gotta love the Internet for food sharing ideas, haha!

  2. Lucky you to not have a sweet tooth. I’ve cut back tremendously, but it’s hard passing up anything with chocolate in it. I bet those are the kinds of cookies that take at least 6 to satisfy the craving! They look really tasty!

    • LOL it is very easy to over do it with these cookies:p Because savory is my thing, I can go overboard with tortilla chips and salsa. I can eat a whole bag if I don’t stop myself!

    • Careful! He might want you to make them every day LOL!
      But they are so easy and quick that he might just make it for himself like my husband does now;)

    • Oh no? I thought they were going to be a mess at first, but what worked for me was making sure I got the size right each time (if they are smaller they require less baking time, if bigger a little more) and making sure I only bake them until they are golden on the edges and no more!
      My hubby burned the first few batches he tried, so maybe 3rd time is the charm?
